Rhubarb Compote


  • 3 lb. Rhubarb
  • 1 cup Sugar
  • 1 Lemon Peel


  1. Wash the rhubarb, cutting away the ends and leaves.
  2. Cut rhubarb into 1 inch long sections
  3. Place rhubarb, sugar and lemon peel in a pot.
  4. Cook it covered at medium heat for 20 minutes (no stirring). The rhubarb will fall apart.
  5. Stir it and taste it to check if it is sweet enough. If not, add more sugar.
  6. Turn off the stove and let the compote cool down.
  7. Remove the lemon peel.
Serve cold with vanilla sauce.
