- 3 lb. Rhubarb
- 1 cup Sugar
- 1 Lemon Peel
Serve cold with vanilla sauce.
- Wash the rhubarb, cutting away the ends and leaves.
- Cut rhubarb into 1 inch long sections
- Place rhubarb, sugar and lemon peel in a pot.
- Cook it covered at medium heat for 20 minutes (no stirring). The rhubarb will fall apart.
- Stir it and taste it to check if it is sweet enough. If not, add more sugar.
- Turn off the stove and let the compote cool down.
- Remove the lemon peel.
