Bolognese Sauce


  • 1 onion cubed
  • 1 carrot cubed
  • 2 stalks celery cubed
  • 4 oz bacon cubed
  • 2 Tbsp butter
  • 10 oz ground beef
  • 1/2 cup red wine
  • 14.5 oz can peeled tomatoes
  • 1 tsp red chile flakes
  • salt & pepper
  • 1 lb penne (or other large) pasta
  • [optional] parmesan cheese


  1. Fry bacon until brown.
  2. Add onion, carrot, celery, and butter. Saute until onions are translucent.
  3. Make a space in the middle of the pot and add the beef. Put the lid on the pan and brown the beef (~5 minutes). Break up the meat with a spatula.
  4. Add wine, tomatoes, and chile flakes. Simmer for 30 minutes to an hour. Salt and pepper to taste.
  5. Serve over pasta, with parmesan cheese. It's also great to serve the same wine as you used in the recipe.
