Pot of Gold

Ingredients

  • 3 Tbsp butter
  • 1 Tbsp olive oil
  • 1–3 shallots, depending on size
  • 6–7 sweet bell peppers (i.e., red, yellow, or orange ones)
  • 250g chicken breast cubed into 1/2 inch pieces
  • 1 large bouillon cube, either chicken or vegetable (bouillon cube should be for the equivalent of 450mL of broth)
  • 1 tsp white pepper
  • 1 1/2 tsp paprika
  • 100 g penne pasta
  • 1 1/2 tsp tumeric
  • 2/3 cup milk
  • 1 Tbsp arrowroot or other starch
  • 2–8 Tbsp whipping cream

Directions

  • Add 1/2 cup of water to peppers and simmer for 25 minutes
  • Sprinkle a dash of salt and white pepper over chicken. In a saucepan, brown chicken in 1 Tbsp butter. This should take about 15 minutes, so you can start it soon after you start the peppers cooking.
