Pot of Gold
Ingredients
- 3 Tbsp butter
- 1 Tbsp olive oil
- 1–3 shallots, depending on size
- 6–7 sweet bell peppers (i.e., red, yellow, or orange ones)
- 250g chicken breast cubed into 1/2 inch pieces
- 1 large bouillon cube, either chicken or vegetable (bouillon cube should be for the equivalent of 450mL of broth)
- 1 tsp white pepper
- 1 1/2 tsp paprika
- 100 g penne pasta
- 1 1/2 tsp tumeric
- 2/3 cup milk
- 1 Tbsp arrowroot or other starch
- 2–8 Tbsp whipping cream

- Add 1/2 cup of water to peppers and simmer for 25 minutes
- Sprinkle a dash of salt and white pepper over chicken. In a saucepan, brown chicken in 1 Tbsp butter. This should take about 15 minutes, so you can start it soon after you start the peppers cooking.
